If I'm going for Nukes, then I use:
Harrier Airstrike
AC-130/Chopper Gunner (depending on map)
Tactical Nuke

If I'm just playing, then I use:
UAV
Airdrop/Precision Airstrike (depending on map)
Stealth Bomber


Earlier today, I got a Stealth Bomber on Wastelands and waited until one of my teammates called a UAV. I then called by Stealth Bomber over B where I saw 3 red dots (3 were using Cold Blooded) and killed all 6 players with my airstrike! My team was going nuts for like 5 minutes.

Carepackage
Predator missile
Emergency airdrop.

I usually switch out the airdrop if it's a map like Highrise and the carepackage if we are playing CTF for the UAV with hardline so it's 2 kills.

Sentry
Harrier Airstrike
AC130

Sentries are awesome, but you rarely get a chance to use them during the original killstreak you got them in, if you know what I mean(For those who don't, sentries work like care packages, so trying to call one in when you're on a killstreak is risky).

Since I'm not fantastic at the game I don't get a high kill streak so mine are:

UAV
Care package
Predator Missile

I'm currently using:
Care Package
Harrier
Chopper Gunner

Care package helps me get some of the killstreak challenges done so easy exp right there.

I usually go rambo into the other teams spawn so I don't get high killstreaks. Oh and UAV is because I want to know what is going on around me.

Predator and Harrier stay the same, but my 3rd killstreak depends on what emblem i'm going for.

If I make it to 5 Kills, which I normally do cause I tend to camp alot, The Predator Missile works like a charm, even if it gets me only one kill. I normally see two enemies close together, so I go for them, killing them both.

Attack Helicopter does all the work for me. I wait about a minute and..?

Chopper Gunner. Ratatatatatatat! Game over. Winning Kill? Dude pwnt by a Chopper.

I like mine, because it works and its easy. Harriers are great and all, but just get killed WAY to easy. Same with Attack Helo's, but they move around and can hide behind buildings. Much better than a stinking Harrier. And Pavelow would be even better, but that takes a 9 Kill Streak, meaning I would have a slightly less chance of actually getting my Chopper Gunner. With this Set, I went atleast +14 on every game I played. Its a great streak.

I found using these optimizes the chance of getting an AC130. Predator u kill 1-2 people. THen you call in the harrier. The airstrike itself kills 1-3 people, and if ur lucky, the harrier itself kills 1-2, and Kablamo! You have an AC130 or your chopper gunner. Personally i like the AC130 better, but i think its a matter of preference. I take a lot of joy in killing attack helis and pavelows, but cannot shoot down the airstrike, even tho u can shoot down the 4th harrier. But taht is just me. with these kill streaks ive had a bunch of matches where i go 26-0 or 30-0

I've changed mine ever since I've became better at Modern warfare 2:

Harrier Stick
Chopper Gunner
Nuke

Got to love using with Airstike then getting another kill and using the harrier strike straight after.

I rarely bother putting down the carepackage, rather use it to clobber people, seeing as i'm either a team ninja or sniper. Mainly ninja lol. Got one nuke so far from meleeing and chopper gunner

AC-130 is great and all, but the massive reload times and not so friendly guns for insides of buildings aren't good for a lot of maps. AC-130 cannot, and will not, shoot into and through buildings, but the shots are 1 hit kills normally.

Chopper Gunner is good for a varity of maps, although, its not very powerful and it takes some good hits to kill with.

Like you said, Its definatly a preferance.

Oh, and with the Harrier? I personally hate the Harrier Strike. It kills fast, and can get many kills with it, but...! It stays in one single spot, easy for everyone to see and have fun shooting down.
Attack Helicopter on the other hand? It moves. It's mobile, and may be a tad stronger too! Harder to lock on to, plus nobody goes for a Attack Helo unless you get spawn killed by it. Harriers are a big target IMO.

me and my freinds desighned or killstreaks as to our skill level so that when we play ground war the enemy team is contantly without radar and under heavy air support.
Since im not great i use
4- counter uav- this makes it so when some of our more skilled players are about to call in airsupport i can make it a stealth bomber everytime
5-predator missile- this is mainly so i can get to my next kill streak and to take out random infintry

The last one is either harriers or a pavelow depending on if im doing good that day or not
